Hi Everyone,

I have been using mostly hickory, and have started to mix apple wood for pork ribs.
Everything else that I smoke has been with hickory.

I recently ordered a sample pack of woods from Cookshack.
Kit includes 5 lbs. each hickory, mesquite, apple, and cherry for a total of 20 lbs. of wood.

Have any of you used mesquite or cherry wood for ribs, brisket or pork butt?

I have also been thinking about trying white oak or maple.

Some smokers love Mesquite especially Texans and their brisket. I am with Old Coacher, a little too harsh/bitter for me. Also, Mesquite burns hotter than other woods.

On ribs, my favorite woods are pecan, cherry and apple (individual or in combination)

Butt - Pecan, hickory and apple.

Brisket - Hickory and pecan

As for maple, I just don't care for the sweet taste it imparts tho many love it.

Do some experimentation and adjust to your tastebud's liking Big Grin

A little mesquite for a brisket gives a strong smoked flavor, but I do not use mesquite for anything else.
Ribs - apple, hickory or pecan

Butts seem to take any of them.

I have not tried maple on anything. I agree that you should experiment and see what you and your family enjoy.
