Chunks would be better. If small, chips burn up pretty quickly. Plus it's easier to cut up chunks if too big than put chips back together if too small...
Are you using a cookshack smoker? If so, I have built one similar to their larger commercial units, and I only need a couple of handfuls of chips to do 100 pounds of meat.
