I've had my smokette for close to 2 years now and all I've ever used was hickory..(always a bag bought at the store)
I'm ready to try diffrent types of wood and living here in Arkansas gives me plenty of diffrent varieties right outside the back door.
Can someone tell me how long you should wait to use the diffrent types of woods after you have cut them down, or in my case, the weather has taken care of that for me.

My recent experience with cherry:

I have some 12" diameter logs sliced 3" thick from a live tree cut about a month ago. Split a few chunks and tried them immediately and it took a very long time to get smoking and didn't produce much smoke. Left 'em in my garage and tried another few chunks last nite and they acted pretty much like normal. I'd say in another month they'll be perfect. My experience with maple has been similar.

Trick is to cut or split into the size pieces you'll use in the smoker instead of leaving it in firewood sizes where it will take several months.
