Since this is your first brisket, you should use one wood type only and keep good notes regarding taste so you will know the difference when you use something else. To me, hickory and cherry are very similar and apple is alot milder than either of those. Hickory might be some stronger than cherry also. Between apple and cherry, apple is the one that actually smells and tastes fruity. I like white oak with brisket.
