Was nothing short of phenomenal!
Gave it a rub of kosher salt, black pepper, garlic, sugar, and some seasoned salt the night before, and kept in the fridge overnight.
7am yesterday morning, popped it in the 50, set to 225, and went about my day.
It looks like I have the probe in the deckle, but it isn't...just hanging there for the moment.
Then, about 1745hrs took it out and wrapped in foil. About 45 mins later:
This brisket won rave reviews from all who partook, and that's what counts.
