I'm smokin 4 butts this afternoon and I need some help. They are all about the same size and will be cooked in my Amerique. I've got a Taylor on order but only the Amerique probe w/o opening the smoker.

I was planning on 2 butts per shelf but what levels should the shelves be and which butt shopuld have the probe? Is the upper part or the lower part of the smoker hottest?
