We found an easy way to clean all 7 racks at the same time. TMC farm store has some tubs that are about 8 inches deep and larger than the racks. About $20 to $25. Just put the racks and what ever else you want in it, put hot water in, and it takes a lot, a couple of the dish washer capsules in and let set. We use a medium bristle deck brush with a long handle on it to brush them in the tub. Works GREAT! The capsules do a lot of the work.
Thanks for the info and I apologize for the late reply. What I’m planning to do is open a small BBQ joint near my house. I already have the location. Its about 650 square foot, its small and basically going to be a take out. I could only fit 1 FEC100 only going to do ribs, brisket and pull pork. Next door is a 2200 square foot location and its going to be available in 7 months. I talked to the land lord and I get first pick at it. I will then get an FEC300, I will use the 300 for beef and pork and use the 100 for chicken. What I basically want to know if I order and FEC100 with 7 shelves, can I still be able to fit 4 rib racks in it, if I remove the shelves of course. Any info would be greatly appreciated and I apologize for the long post.

yes.

To make the 7 shelf, they just add one tray between the each of the four existing ones to get the 7.
