Found this recipe online, and decided to try it
2 pounds of bacon
2 pounds of italian sausage
BBQ rub
BBQ sauce
Lay out a bacon weave at least 5x5, use BBQ rub to cover bacon
Layer out Italian Sausage to cover bacon weave
cook remaining bacon and spread out while drizzling half of BBQ bottle on top
Roll up and use remaining rub on the outside of the bacon
Cook at 225, an hour for every inch of thickness. I did mine for almost 5 hours, just to be safe, and make it extra smokey. I used mesquite chips, reloading hte smoker every hour
glaze with remaining BBQ sauce
Cut into coins. I wanted to try on english muffins, but didnt get it round enough. Wouldnt eat too much at once
Really enjoying the smokey flavor. I like it alot. but wouldnt eat alot at once. and wouldnt make it too often
