I came into possession of a 10 lb.+ bear roast. I think it's a front shoulder from the resemblance to a Boston butt. I don't want 'pulled' bear. Would really appreciate some advice on the best way to smoke/cook this thing. Thanks.
That's a tough one. Have you tried the Find feature yet? I don't recall anyone smoking bear, except for jerky. You might also consider checking some bow hunting sites/forums as well.
Someone is always bringing bear or lion to our potlucks, but they are always roasted and pulled. Can't say I've ever had sliced bear steak. Let us know how it turns out.
