Tip for those new to smoking briskets...

Brisket is easiest sliced thin cold. So, if your brisket is not as tender as you might like it, let it cool. Put it in the fridge. Take it out cold, and slice it very thin.

To heat the slices, put them on a plate, sprinkle a few drops of water on them, cover the plate with plastic wrap. Put them in the micro-wave on Reheat setting. About 30-45 seconds should do it. DO NOT put the microwave into Cook cycle.

You can find a smoked flat in our frige most all the time...wrapped in foil and kept in a zip-lock bag...ready for a quick sandwich.

BTW, if your brisket is too tender to slice normally, simply make thicker slices, or chop it.

Hey, Mike, this tip on slicing was right on time. Thx! I had to transport my chilled brisket to a distant place for the picnic on the 4th. But....there happened to be a microwave there. So, I sliced, drizzled with the au jus (pardon my French) and warmed up three plates piled high. (I hid some to take home with me).
Not toooooooo bad a result. In fact, I'm now famous. The brisket was perfect, and the re-heating worked, even if it scared the daylights out of me. I'm basically in agreement with Smokin, et al., that "fresh is best."
But, then the kids set off the fireworks and scared my dogs. One of them lit out for South Florida. Maybe Tom or Redneck in Training will see him. Let me know. acarriii
