Can one add Butchers Phosphate TR to a rub? I do not want to inject this chemical, or use it in a brine ... I yes ... kindly estimate the correct time to allow the rub (with phosphate added to "sit" before smoking?
This is sold for use as an injection or a marinade, so obviously is intended for dilution before use. I certainly wouldn't use it in a rub without some indication from a reliable source that it is safe, because you will be eating it directly without dilution. Since it is intended as a tenderizer, not a flavoring, why use it in a rub? Just my $.02.
Thanks Jay ... makes sense ... I saw a video on YouTube (which I can't find again of course) which I swear used it in a rub ... I'll now try it as a marinade.
