I bought a pack of country style ribs a few months back. Not knowing exactly what to do with them i Vac sealed & froze. This past sunday arouned 1:30 pm i had nagging desire to smell smoke. Having not prepared anything, i found the Country ribs in the freezer, partially thawed in MW, rubbed with a pork rub(from the forum) and put in 08n & set @250* with a chunk of hickory & 2 chunks cherry. Around 5:00pm, Not sure how long to cook, i searched the forum and found any where from 2 to 6 hrs at various temps. Oh well. At 6:30 I took a peek & they looked done, meat had pulled from the bone & had a good bark. I pulled froom 08 covered w/KC masterpiece & put on grill for 20 minutes. Man what a nice surprise. they were FANTASTIC! 99% of the fat had rendered, but they were still moist, with a flavor to die for. Love that cookshack!!!!--- The wife , who is soso on smoked stuff, had 3 helpings. we had the leftovers last night for dinner and if possible, they tasted better.
I would like to do this again, but am not really sure what the **** country style ribs are.. the bones were large , sorta like a pork Butt , but I am not really sure what they were. Any suggestions?

Like Gibbler said,they are usually just pork butt run through the band saw,and can be fatty and take awhile to render.

They could also be from the
Pork Loin, Country Style Ribs are prepared from the blade end of the loin and include no less than three and no more than 6 ribs

These need to be cooked quickly,like porkchops.
