Was watching an episode of Bobby Flay's Throwdown. (I know, I know). Anyway, he's cooking with this guy from N.Carolina, who's ribs are supposed to be one of the best. (there anyway). He has an upscale sort of BBQ restaurant.Cooks ribs on a grill of his own making (nice looking grill really). But, his style is fast and hot, cooking with wood, 20 minutes each side. Ribs were fall off the bone tender. Beat Bobby's that were smoked low & slow. I didn't know ribs could be cooked this way and be edible. Thoughts anyone?
