come to think of it last i heard several culinary arts students at hastings youth academy had "graduated" to the big house in raiford.
if they are being used as judges all i can say is "thank god for double blind judging" as i am sure the ones i flunked will remember me with less than fond memories.
it was a fun 4 years though teaching in that setting as my students were armed with knives and the guards were only armed with their hands Eeker

A contest in that area of Florida will draw alot of teams, if the entry fee is reasonable.. The Lake City contest historically has one of the highest entry fees and they still draw 40 teams.

I would bet that contest (Lake City) would be well over 50 if they brought their entry fee down.

I'm thinking in Starke they will re-think how they do things next year.. I wouldn't be surprised at all to see them go over 50 teams next year.

seriously though (and she really does own an uzi) we would love to see more contests in north florida.
ocala bill warned us about the ham jam thing and how they treated competitors there so we have always dusted that one off.

we went to this contest just have have fun.
peggy once again held the family honor up with her chicken. she always uses jack's old south as her gauge and came in 5 places ahead of them. granted this is not myron's best catagorey but hey she feels use the best as a gauge and go from there.
myself i tweaked everything i normally do just to see where the judges were at versus the people we gave food to. went with a little of the mustard sauce in the beef. judges were so so but the visitors we had coming around liked it. had two locals asking about how to do brisket and gave them my times and temps and what i used and they just wanted more mustard sauce so what the heck told them about this forum for the recipe.
we had a grand time!!!!! even though this was a first year contest we could not have asked for anything more from the organizer. only complaint i have is the FBA should throw out one low score just like all subjective sports do!!! kind of makes me think that next year we will do kcbs just to see since we have memeberships in both organizations and they do throw out the low but that we will decide later.

We had a lot of entertainment with the antique tractor motors. They sound like a popcorn machine popping one huge kernel at a time. We got a few tractor parades which were a lot of fun.
It was plenty wet, swampy in spots, but the organizers tried really hard to get us all to dry ground. We had nice restrooms.

I just want to win a chicken trophy! I can't figure out what the judges want.

I hear the frustration Peggy... Chicken used to be a hit or miss category for me before I got the FE's..

It was the only category I could not cook consistently on the Lang.. Now, hopefully it looks like those days are over. We have been in the top 5 with chicken almost every time out since, including 2 first places... I hope I didn't jinx myself.... Anyway send me an email with what your doing and I will see if I can help you a little..
