I hope I don't step on myself asking these questions:

1. what options are available on the 500/750 that people like? Is there a foot pedal for the rotisserie to some other way to rotate the racks without using my greasy gloves?
2. is there any auxillary heat option (propane?) for reheating without using pellets?

Obviously I'm nearing a decision on point- at least on ordering a new trailer. Which brings me to my final question:
I'm probably going with H&H with a trailer similar to debestbbq's. In this case where I won't have the pit when I get the trailer, how to I indicate to them that I will be adding about 2000# to the tongue area? How will this thing tow prior to adding the pit? I would think it wouldsway a lot due to the weight problem.

It feels good coming to the end of a decision road. I'm looking forward to meeting up with Red here in Houston to check out the big FECs- he said they took 5th in the Houston LS&R which is a BIG deal!

Thanks SmokinOkie. If I precook (I'm talking catering here not competition) for a large meal and I want to reheat the chafers and such, it seems like I'd rather just fire it up like a gas oven instead of burning wood. Saves on smoke in my face and muck on the pans to scrub off. Dual fuel is also nice if you run out of one or another.
The reason your worried about running out of fuel is because you can't see in those gas bottles! You'll be able to see right in the hopper and tell how much cooking time you have. The smoke in the pit is differant then when you were burnning those logs and it doesn't really stain pans in a short term warm up. To make a good decision you need to really see them work. These pits are alot easier then using multifuel cookers. I take it that you do want the folks that come to your catering to think you are a BBQ caterer don't you? Smoke coming from the pit will let their sense of smell know that you are. If you will get together with Red he'll be able to answer mostly all your questions extremely well. He does cater large events and can give you alot of real work experiance with the pits.

They also were first place over all!!!!!!!!!! Hot Knots Cookers was cooking on FEC 100's

Yeah, That's the one I like also. I talked to Frank Bailey and he was sayin that he would move the axles forward a bit next time.
He said he's looking to sell it this spring for $65,000 OBO! I choked, and said thanks for the info. I will probably have S&S build one for me.
Also, someone was saying that it is a good idea to run anything that heats (H2O heater, stove, etc) on gas. With that in mind, where will H&H put a gas bottle? When I talked to them, they were thinking in the nose right in front of the smoker. All it would take is one gas leak while the smoker was running and the Good Lord is going to be asking "you know where you messed up....right"?
Any idea's on propane tank placement?
