I'm cooking spares for a Christmas Eve party. I need to cook them a few hours ahead of time and travel an hour to get there. I plan on cooking them the FE way of 4 hours at 275*.

How would you guys recommend I finish them off? Should I only cook them 3 or 3 1/2 hours 1/2 and do the last 1/2 hour/hour on the grill or oven at my destination? Should I cool them and reheat them or keep them warm? I also have a cambro if I need to keep them warm. Also planning on putting a glaze on them.

Thoughts?
