The temps will jump around until you get some smoke on those new shiny walls. Are you cooking anything? If not, pork butts are your best bet. They are cheap (relatively $2.48 @SAMs today Frowner),easy, and forgiving. Try 225-250 and let it ride. If it is completely out of control then a call to Tony or Bill on Monday is in order.

Thanks Joe for the quick response our concern is that the temp just kept shooting straight up. Did not have anything on it was doing the first burn off to get rid of all the factory smells.

We shut it down once it reached 610 after like 20 minutes. Seemed like at that point the auger should have stopped feeding the massive fire?
