Candy may be right about her appearance scores were higher than mine because of garnish or maybe her entries just looked better than mine. All I know is that for the one entry where I used garnish (anything butt), the results were virtually the same as for the entries without garnish. Not enough samples to call it science yet, but at least there was no apparent variance.

I plan on not using garnish most of this season, although there is a big seafood contest in Seattle where I think garnish does play more in the scores.
One of the board members & president of KCBS, Tony Stone S&S Cookers was cooking at Hammond. He didn't use garnish either and did quite well.

I really don't think garnish is all that important. I don't think Appearance is all that important if you can't get Taste & Tenderness down.

Obviously, in Hammond, judges did not obcess on garnish. I suspect that cooks dwell on this more than judges do anyway.
