Have you done one before? I know you're looking for a cooker. You have a source for the whole hog?

All I know is what I learned from some really good Memphis in May Whole Hog cookers.

They inject everything, especially the shoulders.

Just a pork rub, if you want to get fancy, you can do parts of the pig with different rubs.

Depends on how you're serving this. Will it be a pig picking? or will you clean and serve? Makes a difference if you're doing the clean and serve you can season as you pull

Not sure, but look at the brines in Brining 101 and use one of them as an injection. Yup, you heard me right. I do variations of those recipes in contests and since I did my Butt scores have really improved. oops, is that a contest secret Wink
I have done three so far. Right now I have a pig farmer sho sells them to me at about $1 per pound. But he is VERY old and I'm not sure how much longer that will last.

I have another source -- retail --- at about $1.80 a pound.

I'm just looking for ideas from the guys / gals I know might have the best info.

BTW, all 3 of mine have come out great, if I do say so myself.
Thanks! That is a great thing to have. And just about what I was thinking was a fair price. I may have guessed that I would charge a little bit more, but that is because I live in Philly.

Not only don't they say where they are located, but they don't have ANY contact information... just plain dumb!
