i just recently received a slightly used fec100 and i am just getting the hang of it. it came with the temp probe so i decided i'd try it out last night.

first of all let me say that i've never slept better while cooking, i woke up once worried about the smoker then i remembered it was in the new fec and i went back to sleep. i put a brisket in last night and didn't check on it until 8:15 this morning. when i did check on it i didn't even have to open the door. I am loving this cooker.

I have to admit i'm worried this smoker is going to make me lazy. i left the membrane on the ribs the first cook and they were as tender as any i've made before. then, i never mopped the brisket or turned it at all. i just let it sit in the same spot the whole time.

one note for anyone as slow witted as me, it seems like the ower's manual is missing a step. when you are going to cook on probe mode you first have to hold down the mode button while arrowing up or down until you get to probe mode then you can follow the directions in the manual from there.

Rob,I'm not demeaning a manual. Wink

I think much of us had to hit the ground running on these things,and your questions were how we learned.

Fast Eddy had worked with many of us at cookoffs,and Cookshack had a couple 2 day cooking classes,a couple times a year.

They were meant for us to share with the group,and go on to the forum.

Tony in customer service,was a great one on one teacher to many of us,and you still hear us refer questions to him.

The FEC forum has worked at becoming "the manual" and we are still very much a "work in progress".

These questions/comments are how we ALL are still learning about these cookers.

Fast Eddy knows things,he doesn't even know he knows,and he chimes in to help us.

Just a couple thoughts and thanks to all the cooks for their input.

We emphasize to all new folks to read through the FEC forum and download anything that might be of interest.
