I bought a 10 pack of 4.5lb boneless, frozen turkey breasts (they were the only ones I could find that were not in a solution). I plan on smoking 3 of them this weekend. I am thawing them all because they are pretty well stuck together and I didn't want to cut them to separate. Based on what I have read, I need to cook the breasts to 165* if I want to refreeze them. Is this true? Should I thaw all of them or can you suggest something else?

Well now,I ain't no expert on gobbler breasts,but I've cooked more than I like to admit.

If it isn't too late,and they have lots of ice crystals left in them,break them into their pieces,with your paws and something like a chisel,while they still have lots of ice crystals left in them.



Keep out what you are going to cook,plasic bag the individual pieces you want to refreeze.

Now this ain't brain surgery,and I assume each of the pieces are going to be eaten,nor entered in no beauty contest.

I'd brine up the pieces with Smokin'Okies brine for 6 hrs,or overnight and cook them to 160* internal.

That post you linked to probably means something,about something,but I'll be dipped if I can conjure up what.

It made my head hurt,tryin' to figure what.

Maybe one of our gobbler experts will chime in later.
