So I just picked up my new Sm025 from The Charcoal Store. After break-in, what is the first thing I should cook that will knock y socks off??? Shoulder, ribs, brisket?

Pork butt's the most forgiving and tastes great.

PB - easy - keep it simple
Brisket - Medium (easy with minimal practice)
Ribs can be difficult and frustrating until you develop a method
