A while back, someone posted an appetizer made with pork sausage stuffed with cheese. I don't remember what they were called to search out the recipe.

Butterfly the Jimmie Dean sausage rolls,fill with slow melting cheese,if you have it.
Reform.
If you want much smoke, run the FEC down around 160*
Most folks take them to around 160*,wrap and chill.
Slice,serve with mustard and crackers

Thanks all. It was the moinks and they turned out pretty good. I smoked them a little too long as the cheese ran out of a few of them. Defiantly worth a do-over.

Depending on the recipe, you could freeze the cheese before you smoke or use "high temp" cheese made for sausage
