Started with a question and wound up with a great rib process. I use my rub or William's Rib Tickler, Max's foiling recipe/method, and RibDog's glaze recipe/technique. So it's a combo building on good ideas of others. But I started the thread and had tons of fun with it.
Of course Smokin shouldn't be left out...he taught me how to cook them properly and test for finish (and this dramatically improved my consistency) in the first place.
My usual go to method is a good rub, smoke em, glaze em. People call it KISS. I think I'm just lazy.
Don't know why, but unlike many, I prefer loinbacks over spares. Think it's the taste and the texture of the meat...like the mouthfeel. I'm still cooking loinbacks over spares at a 3 to 1 ratio. Maybe if I evened it out, my tastes would change. But I'm happy.
