d, when I cook full racks of spare ribs in mine, they will run from 3 1/2 to 5 hours. Depends on the ribs, and just what temp you are cooking at. I actually have better luck kicking the temp up to 270 or so, and cooking a little less time. I do spritz with apple juice a couple of times at the end. Cook until the meat has pulled away about a half inch at the end of the bone, and they are done. Baby backs take a lot less time.
