thinking about taking the skin off a whole chicken we are smoking tomorrow. Does anyone else do this? We don't eat the skin anyway, thought i would get better effects from the rub and maybe better smoke penetration ....
I normally remove the skin. I have an 09 and an 055. I remove the skin, coat with olive oil, then rub with what ever you like. smoke/cook to 160* and eat! Good luck
I've smoked skinless breasts and they turn out great. The breast meat takes smoke better that way. Brine them first, and they become special...moist and flavorful.
For many years,if a question came up about almost anything in a smoker,I recommend to buy a couple pound fryer for a couple bucks and see how it turns out.
