Greetings to all! My new smoker should be arriving in a couple weeks and I have been biding the time by reading through the posts on this message board. I can't wait for it to get here so that I can get started.
I've used an offset for years. I used to really enjoy burning the wood down in a pit and then shoveling the coals in. I could turn out some excellent pork and had recently(since moving to Texas from Tennessee)done some excellent briskets. But,the big issue has become the time that I have available. I'm looking forward to being able to sleep at night AND get excellent Q!! Thank you for this site and all the great suggestions!
