spares St. Louis Cut

I trimmed some spare ribs and followed the directions as best I could. They came out great but they had little cartilage ribs in part of the cut that I didn't like much. Did I do somehting wrong in the trimming process or am I just being picky

I had the same problem when I trimmed St. Louis the first couple times. Still happens some. I found Smokin's post where he explains how to trim St Louis Ribs. In it, I ask the same question.

So, if you're really worried about that little end piece at the end of each bone, then you need to trim it at an angle and follow the physical end of the bones.

You won't get a pretty rectangular set of ribs.
