My wife finally bit the bullet and bought 10 lb of John Henry's Pecan Rub. How should I store it? 1/2 lb in vacuumed sealed bags in the freezer? We probably won't use as fast as many of you so it needs to last ~1 year.

I'm not sure it's necessary, but I toss mine in the freezer.

DON'T do a hard vacuum. You'll get a meteorite when you open it (don't ask how I know).
Do a firm vacuum and it will store.

Would it need to be frozen?
Not necessarily; refrigeration would work just as well. Spices and herbs are sensitive to sunlight, direct air circulation and heat. Anything that will suppress those 3 will prolong shelf life.

No it wasn't that, it was more like CLUNK, just one big solid mass that I couldn't break up easily.
