I have not checked the actual cooking temp. But, I don't think it's just the plateau cause the temp actually starts to fall after a bit.

It's like the smoker just stops heating.

Been fnishing them in the oven, that only takes about 15 min max and they are done.

Need to do a roast beef on tuesday evening - we will see if I have the same issue.

Can't tell from the response, if the 171 was the temp of the meat, then it's in the plateau and just let it go longer to finish, it will zoom past it ONCE it finishes getting through the plateau.

Check the temp of the smoker... empty.

The fact it's hitting the plateau should have zero issue with the temp of the smoker.

You should set the smoker to a temp, say 250 and see what it registers at.

Sounds like the therm is the issue
