I've been thinking about this.. a bunch of local Q places are opening up with OH pits. They've just got these monsterous gas pits sitting open in the kitchen and people are lined up out the door for this junk- even though they can see what's cooking it. I just like some mystery in my Q. It's bold to leave these big things in plain view.. at least build a wall to have the doors stick through.. but I digress...

What if there was an FE that could cook 1000# or more? A gigantic-volume restaurant machine. The place down the street from work has 2 giant OH pits and they load them each with 900# every day. It's really unbelievable to watch.

And so I wonder. How big is too big? With a chain drive you could have more spokes with fewer racks. OR a bigger rotisserie drum would allow whole briskets on all three levels of the racks. Somewhere in my mind I think of having a pellet silo sticking above my restaurant making it a landmark of sorts. Ad a long rotisserie that neest more than one set of doors to work it.

anyhoo, just late evening fantasizing. Have a FE fantasy to share?
