The only time I have ever smoked butts in a pan is when I am Cuban pork and I need it to sit in the marinade while it smokes.
If you are going to smoke meats, you can't be worried about getting your smoker dirty. In fact, I think the smoker is happier when it gets dirty from smoking meats!
I'm not hard and fast on any rule. If it works for you, go for it.
Do I do it? No. I think that pans get in the way of smoke penetration as well as all the bottom of whatever you're smoking to step/braise in the liquid.
If it's something you do, go for it.
If it's for cleaning purposes, I'm with John on this one, it's a smoker and it doesn't mind a little gunk on the ranks and the bottom of the smoker.
ok ok i smoked some butts last night went back to no pans and i think you guys are right i have been useing pans for awaile now and forgot the simple things i like these alot better thanx for making up my mind for me guys.....
I smoke everything in aluminum disposable pans with a raised rack so the meat never touches the juice in my 009. I use the 3-2-1 method for my ribs and all I do is spray with apple juice and cover tightly with foil. Haven't changed the foil in the bottom of the smoker in two years. I don't like the mess so that's why I do it. It works for me and I havn't had any complaints with the Q : )
smoked two more butts yesterday again with no pans its the only way to go from here on out..i did wrap them in foil when they hit 150 then let them get to 190 and man those were really good useing the viniger finish sauce from jacks old south...the best yet thanx for all the info
