cant comment aboit a cook shack smoker but if you start at 7pm i cant see why a 7lb butt wouldnt be done by noon the next day if not i'd look at cooking on something elese i guess you know to cook arround 225 250 but no higher than 250 and if you wrap in foil or use a foil pan that will do 2 things speed up your cookin time and allow the butt to cook in its own juices but i wouldnt wrap for the first 6 hours,hope this helps and good luck to ya'll
