I have an 008 and love it but it would be nice to have a meat probe that will allow it to shut off when the meat reaches the desired temp. Can something like this be added to the 008 or would I have to upgrade?

Have you looked at the BBQ Guru Power Raptor controller? I think it is made for precisely this application.
I haven't used one, but I saw a picture somewhere on this forum of someone who was using one.

Instead of shutting off, you probably want it to go into a 140* hold so the meat won't cook further but will remain in the safety zone.

I'm the one that uses the Guru/Raptor combo referred to above.
Donna, and Smokin should pardon me, but, I felt it was like using a mini-Amerique for us poor-folks!
Smarter people than me have developed their own gadgets to control the CS pit and meat temps.
My combination worked fine with my SM008. Since then, the GURU folks have developed other controllers but still have the same Raptor.
You might ask them how they are working with the CS, as, I have had problems since selling my Competitor and buying a Digi-Q from them.
