it's really a personal preference. Some places will have a few sides like potato salad and baked beans. Many years ago when I went to the original Dreamland BBQ the menu was simply ribs. If you wanted a side the only choice was a bag of chips, and the ribs were served with white bread. Times have changed and now with the franchises they have chicken, more sides and a few desserts. Check the menus of a few ribs joints online for more ideas.
A "traditional" BBQ (US style) would be ribs, sauce (on the side of course because that's how we roll)

BBQ Beans (do them in the smoker)
Potato Salad

I agree with the above, but I do like a big piece of Texas toast, toasted of course with a substantial amount of butter, garlic salt is optional but good.
