Amerique 1st Time cooking

2.5 lb chicken, temp 225, probe 180. 7 hours done. I did open door 1st hour. Book shows about 3 hours cooking time.Did open door increase time additional 4 hours?

Nope, I doubt that.

I believe that Amerique was given the capability to cook at 300* for poultry, and you should try that next time, without opening the door.
