Most of it is like eatin' ground hog,or 'coon.

You can sear the tail,until you can skin off the tough hide.

You could cook it indirect,like a brisket flat,or just crockpot it ,like folks do a pot roast.

Fat can be real strong,so follow same process as 'coon,or "whistle pigs" for the body.
