It's actually MY birthday. Friend of mine said she'd do it, but she said my Que was way better than hers. So there we go.

No Tri-Tip to be found in this neck of the woods. Think I'll just stick with the butt and chicken. Maybe make some fatties for an appetizer. Should have plenty of sides, so I think I'll be ok. Besides my killer Margarita's will be flowing! Big Grin

BTW, Happy B-Day Somokin'!!! Mine is on Thursday (49). Hmmm... Maybe I should take a drive out your way on Monday??? Smiler
Well, with all these old fogie smokers I feel the need to put in my two chips. My b-day is Friday (the big 5-0), and I made the offer to feed my co-workers on Thursday for a lunch picnic at the park. There's 4 other people celebrating at about the same time. I claimed I could make pulled-pork BBQ so good it would make you want to slap your daddy, and durned if they didn't take me up on it! I'm supposed to feed about a dozen, so a good sized butt ought to cover it.

Cookshack makes it easy enough so it won't be all that much work Thursday as long as I do the prep the night before on all the side stuff.
Thinkin of making up two different sauces for the butt. Was down near Raleigh about 10 years ago and just fell in love with the vinegar sauces. Not sure how it'd go over with all these mid-westerners, so I think a small batch with some Carolina sauce for me. It is my B-Day after all! Smiler

Gonna make some smoked beans too, question is if I put the beans in the CS in the morning under the butts, will there still be enough drippings to flavor the beans? Also, should I add another chunk of wood?
