I hadn't been to a BJ's in about 18 months. I git one of those free 60 day memberships and bought some Baby's. 2 to a package. I think they were called Prarie Fresh and in cryovac.They are packaged in such a way that the lettering on the package covers most of the front side of the ribs. These may be the worst quality ribs that I have ever bought. I live in New Jersey where the pork in stores really sucks. After I trimmed the thick pockets of fat off, there was a sliver of meat on the bones. They are essentially shiners. Also, as is the case with crappy ribs , they aren't close to iniform in thickness. One end is way too thick while the other is paper thin. Impossible to cook at the same time as one side is finished before the thicker end. Whatever you do, stay away from this place. The spares looked a little better but not by much.They need to keep these crappy ribs on the prarie.

Now I will try the crovacs at Restaurant Depot. just got my KCBS membership. I would hope that they will be better in quality. Of course this is New Jersey where I think all of the crap pork goes to.

BgiD - Up until last summer I was going through 2 cases @ week of BJ Prairie Fresh loin backs at the restaurant. At that point they were packed 3 per CRYOVAC. I made a point of looking for 3 packs in the 8.5-9.0 lb weight range. Most were very good.

Last year BJ's switched to two packs (butcher said customers didn't want to buy 3 racks at a time) Quality went down. Yes, some shiners hidden below the heavier top one. I wound up switching to IBP "Founders Reserve". If you really look hard and poke around, you can find a few decent Prairie Fresh ribs that are nice but it's getting harder & harder. Maybe PF switched pork suppliers?

I will tell you that the heavier PF pork butts are very nice if you can find them in the 8.5-9.0 lb range.
It's funny, but I won a LOT of $$$ on those ribs. Max; about 2 years ago (or so) they sold out to IBP or somebody and now they are available everywhere. What made them great was they owned the entire chain from growth to end, but when they sold, they cut back on process & quality.

Key is be selective. Look at the weight and go for heavier. If you don't see any you like, ask the Meat manager to open another case.

I do think all the providers do send out their smaller/substandard products, I 'm just not sure they always ship to N.J. I've gotten shiners here too.

The ones I bought from RD on Sunday were great, had them last night.
You don't have to buy a case. You can get the guys in the meat dept to label them for individual sale. That would be 3 in a Cry-O-Pac.
They're on sale for $2.99 lb in the Alex, Va store if you buy a case though, otherwise $3.49 a lb.
Now that I tried them, I am going to grab a case or two before the sale is over.
They are Baby Backs, nice and meaty. The smaller cry-o-vac was 8 lbs with 3 racks and the second cry-o-vac was 10 with 3 racks in it.
I cooked the 8 lbs package.

Box said Cargill and Excel on it. Guessing Cargill is the distributor and Excel is the brand.
I know there are a lot of Cargill chicken farms in Southern Virginia.
