I volunteered to cook brisket for 250 at a church Christmas party. I'm thinking of going with flats to get the most usable meat possible in my FEC 100. From what figure 150 pounds uncooked should equal 90 pounds cooked should equal about 5 3/4 ounces per plate. Is my thinking in line here and just how many brisket flats do you think I can get on the four shelves?

The weights seem about right,but if the cases worked out to have another 10-12 lbs,I wouldn't complain.

As you know thickness/measurement will control that completely.

I've seen Sam's get cases that averaged about five lbs,and Restaurant Depot had 9-10 pounders a couple weeks ago.

A bunch of small ones might get you 30 lbs/shelf.

Big ones might be only 20 lbs/shelf..

I saw someone cook small ones upright in the FEC rib racks,and got a larger load.
