I mop my brisket, but I have a process to keep the FEC clean. I have a small cart I roll up to the cooker with a drip tray on top. I pull out the entire shelf with the brisket and mop it on top of the cart then return it to the FEC. Minimizes the mess. I usually mop about half way through the cook, then every 2 hours until done
