Well, we're gearing up for the oct. 9th church BBQ fundraiser for abbour 200 people. A couple of weeks ago I bought 10 5# butts @ $0.99 and froze them (going to buy more tomorrow). Me (and my SmokinTex) and two friends (WSM) are doing the cooking.

My friends both decided to do 4 butts yesterday. Both came to church today and said that when they went to pulling they found a strip of firm, dry meat in the center and thought it very odd. So did I. Could this be te result of freezing the butt? I have never cooked a frozen butt, always been as fresh as possible from the butcher.

Any idea what's up? Not totally thawed? seems like that would produce the opposite results, then not everything in smoking makes sense.

How long did they thaw? Sounds like they were still a little frozen, but they would thaw while cooking (not the best way) and the meat around it would keep it moist enough. Probably just the cut you got.

Done many a frozen one and I let them fully thaw in the fridge before smoking.

The only thing I can figure is there is part of the butt, in the middle that is a different muscle and it will not cook tender like the rest until the very end. You have to overcook it a little for that to get tender.
My thought too Smokin. They set in the fridg for 2 days thawing. I don't know if that's sufficient time to thaw 5# of frozen solid meat. My first thought was "well turkeys that in 48 hours," but they have a hollow cavity to allow the somewhat warmer air to thaw from both inside and outside.

Oh well, we'll see what the next batch brings. I'm doing mine fresh! Got 4 5# ers in the ST now just coming out of the pleteau. I know what I'm havin' for lunch! Big Grin
