Why is it that the chips I used yesterday would only partially burn and the chunks I used turned to ash? I read in the owner's manual that this would happen but am wonderin' why.

I do know the CS smokers are made for 1-2 ounce chunks of wood to be used. I had an 8 hour smoke yesterday and had 2 chunks of black charcoal left out of the 3 chunks of wood I started with. Explain that. One might think they would all be burned to ash after 8 hours. I had smoke the entire cook coming out the top. I think cherry wood is very dense, for one thang.

I think it may be the lack of oxygen the wood gets from being in the smoke box it just smoulders in there.
