Yep,by the time folks get turkeyed out over Thanksgiving,Christmas gets to be a big time for standing rib,and other beef roasts.

Large pork roasts/fresh hams/suckling and whole pigs are favorite.

We just helped friends put together a traditional Southern meal of butts and briskets for 100 folks.

Keep up the good work.

Don't know if it explains it ,but they are U of Tn alums. Big Grin
