Took a 7 lb brisket and braised it in my smokette.... rubbed it and wrapped it for about 6 hours. EDIT... I seared it first, before braising, which is fine, since I wasn't smoking.

Generally this is what went in the braising liquid:

3 dark beers
2C ketchup
caraway seeds
beef broth... 2 - 3 cups
2 minced onions
1 huge thickly sliced onion
apple vinegar... maybe 1/2C
garlic cloves
1 cup of sugar

braised it for about 6 hours @250 degrees. Reduced the liquid after cooking and turned it into a sauce.
