After fighting with many ECBs I bought my first Cookshack as a Xmas present to me in 2004. After buying my AmeriQue as a Xmas present to me in 2009 I have really expanded the amount of time I spend reading the forum, conversing with other members, and smoking everything imaginable.

This past year I have spent a good deal of time traveling back and forth to see my younger sister as she struggled with cancer. My AmeriQue was beginning to spend as much time on the road as it was turning out good Que.

The last three weeks of Sis’s life we were able to have a celebration of life with her and all the extended families and my Cookshack was a big part of that celebration. With the exception of the day I fried chicken and the day I fried fish, caught from Sis’s pond, my AmeriQue turned out one masterpiece after another. And I have to say that frying fish or chicken, even with a heavy duty fryer, was much more time consuming than smoking anything, even a brisket or a pork butt.

Because my AmeriQue is so easy to use and the advice I have gleaned from members of the forum I did not miss a single second of visiting with anyone because I had to tend to my smoker. However I do think some of the guys actually did miss going out behind the shed to shooting the breeze while standing around tending to the smoker. The standing joke became the lack of time I spent slaving on my smoker.

Thank you Cookshack you made me look good while making life a little easier for me and our families.

I'd put some foil on a shelve in that AmeriQ and laid some of those fish fillets on it. Use a little lemon juice,butter, and seasonings. Cook at 225* for 45 minutes or so...you might never go back to deep frying.

Sorry to hear about your loss, but sounds like you guys celebrated a life and that's how I want to be remembered, ya know!
