Need some advice, I am doing 3 split chicken Sat. On my 008, will I have to rotate the shelves during the cook? Also what about coating them in mayo and seasoning them. before the cook? Any pointers welcome!!

I would use about 2 oz of wood on 250*, switch around the top and bottom grates after 2 hours, check them after 3 hours. It will probably take a total of 4 hours with opening the door and rotating the grates.

I wouldn't rotate them, so you can see the results. That way, you'll know if it's worth the effort or not.
As for Mayo, a light coating works best, then sprinkle with rub.

The top grate in my 008 cooks much hotter than the bottom.
