I have a friend who's wanting me to smoke some wild ducks in a couple of months. I searched the forum and came up with some good information but I still have one question. It sound like there is a definite difference between smoking a wild duck and a farm raised duck. Is the main difference the potential cooking time because of the fat content? I was hoping to get one under my belt before I do his but I doubt I'm gonna have the opportunity. I've had success doing chickens and turkey so I plan on using a similar approach with duck...
