After having read these boards, I felt somewhat prepared for my first actual smoke. Did three racks of baby back ribs (bit over 6 pounds) that had been frozen. Used all 3 racks. Ran the ribs for 4 hours at 225, then opened the smoker. Moved the bottom rack to the top and the top to the bottom. As an experiment, I coated the bottom rack of ribs with sauce and then wrapped them in aluminum foil. At 5 hours pulled them. They were awesome. I think I the wrapped ones were a bit more tender.

I get to Kansas City a couple of times a year to judge wine competitions. I've hit most of the places and L.C.'s is my favorite. This wasn't that good, but a wonderful substitute to bide me over between trips.

After a few more tries you probably will be biding your time while in KC instead of the other way around. Smiler
