I usually buy mine from costco the week of. Do you just leave it in the Cryo?

I am assuming you just make sure you have a good tight seal with no air in the cryo pack? Is that wet aging? I am sure I read that on a thread somewhere.
Yup, read PR101. I actually look for a tight seal, but I also look for if there is already liquid in the bag and buy that. Basically that's one they've been holding and is already aging a bit.
NEVER EVER buy anything cryovac'd that is loose in the bag. If I find those in the case I hand them to the butcher and they know to check it.
